I’m always searching for breakfast that both meets my health goals, AND that my kids will eat. Add “quick and easy” to the list, and it almost feels impossible. We have our usual rotation of cereal, yogurt bowls, and smoothies, but I like to do a warm breakfast at least a couple of times a week. Pancakes get old fast, and I loathe waffle makers. So I took matters into my own hands and started to try to create some of my own recipes.
This one is now TRIED AND TRUE. I love it. My kids devour it. With ingredients that we usually have on hand, and done within 30 minutes, I’d call it a win!
You can switch it up by adding chocolate chips, fruit, or even a streusel topping.
We use this recipe to make 1 pan of regular size muffins, and one pan of minis. OR it can be used to make about 18 regular.

TIP: I like to spread some peanut butter on top, and have some Greek yogurt on the side to make this an easy, well-balanced breakfast for myself. The kids like it on its own with a cup of milk!
