Trust me, I know all about how the majority of “high protein” meals actually taste (I’ve tried to force them down). And I’m not about to take the time to make a whole separate meal when my kids won’t choke down the protein powder either. That’s why I LOVE this Lemon Chia Protein Pancake recipe, and you will too. If your kids are like mine, they’ll probably lick off all the whipped cream first, then end up wanting a second pancake!
My favorite things about this recipe:
- high protein without the protein powder (so you’ll stay full longer)
- What’s not to love about pancakes? Kids always devour them, and these are no exception!
- Chia Seeds add a great boost of nutrition (Omega-3s and fiber) – but you can keep them out if that stops your kids from eating them.
- These freeze great! Make a big batch and throw some in the freezer to have later.

Ingredients:
2 Cups Kodiak Cake Pancake Mix
3 Tbsp Chia Seeds
1 Cup Nonfat Plain Greek Yogurt
2 Eggs
½ Cup Liquid Egg Whites
½ 1% Low Fat Milk
1 Lemon (juice and zest)
Instructions:
Mix wet ingredients until well combined. Add dry ingredients and mix until smooth. Pour onto a hot griddle or skillet and cooked to desired doneness. Divide total pancakes by 4 to find serving size. Top with syrup, berries, and whipped cream!
